Matooke, the national food of Uganda

Matoke, or Matooke is a triploid banana cultivars originating fro the African Great Lakes region. They are a staple food crop in Uganda, especially central region. It takes a year from time of planning to when it's harvested, when it's still green. The Matooke are then separated from their branches and peeled. They are washed and wrapped banana leaves, in the sauce pan below the Matooke wrap, they put pieces of Matooke stems called ekikolokomba to support the Matooke wrap as the water underneath the wrap will be boiling and Matooke is steam cooked, when it's soft, it's smashed and then steam boiled again to have for a better taste and to conserve it hot. And then it is served. Another dish from Matooke is Katogo. For this, Matooke are peeled and then boiled together with a desired sauce like ground nuts flour, beef, beans, offals, etc. When the mixture of Matooke and desired sauce are ready, it is served usually for breakfast and sometimes lunch.
